Green tea brewing tips

Tips for green tea preparation: 
  • NEVER add boiling water to green tea, it will cause the tea to become bitter. If you don’t have a way to ensure exact water temperature, take boiling water off the stove and wait a few minutes for it to cool a bit (pouring into a different cool vessel speeds this up). 
  • Avoid over steeping, 1 – 3 minutes is a good general rule but taste the tea after 1 – 2 minutes and stop the steeping process before it becomes bitter. 
  • Most looseleaf can be re-steeped several times as long as all the water is fully drained between steeps. Store the steeped wet leaves in a sealed container in the fridge (up to a day or two) if you do not plan to use it in an hour or so. Get the most from your tea! The flavour will change with each subsequent infusion and you will be introduced to a world of tasting notes within each cup!

    Sencha – Sencha is the quintessential Japanese green tea, steamed to maintain the fresh grassiness of the Camelia sinensis leaf. This sencha from Momo Teas is our favourite that we’ve tried, prepare it with intention and drink it slowly to enjoy the vegetal flavour with aroma and tasting notes of grass, kale, kiwi, and more! What flavours do you taste? 
    **note that this is a “true tea” from the Camelia sinensis plant and therefore contains caffeine**
    Brewing instructions – Add 150mL of 80 – 85 C water to 1 tbsp / 2-3g of tea. Steep for 1 – 2 minutes. Can be re-infused once or twice if the water is completely drained from the leaves each time. Serves two (serve in small cups).
    Genmaicha - popular Japanese green tea with roasted brown rice.  This blend has added black beans and matcha powder for earthy depth in every cup.  Look forward to a toasty, "popcorny" aroma with a nutty character.  
    **note that this is a “true tea” from the Camelia sinensis plant and therefore contains caffeine.  This product also contains roasted bown rice, black beans, and matcha powder which has additional caffeine**
    Brewing instructions – Add 150mL of 95 C water to 2 tbsp / 5 g of tea. Steep for 30 seconds to one minute. Serves two (serve in small cups).
    Hojicha – this roasted green tea from Japan is gaining in popularity for its smooth, toasty flavour. Unlike traditional Japanese green teas, the leaves are roasted after they are steamed. Roasting decreases the bitterness typically found in green tea and decreases the caffeine content as well as tannins. Hojicha has a naturally sweet and smoky flavour with notes of cocoa.

    Brewing instructions- Add 150mL of 95 C water to 2 tbsp / 5 g of tea. Steep for 30 seconds to one minute. Serves two (serve in small cups).
    Gunpowder – Gunpowder green tea from China is pan-fired which results in a smokiness, sometimes compared to a peaty scotch. It gets its name because the leaves are rolled up during processing, resulting in tiny balls that ressemble gunpowder. The shape of gunpowder tea means that it holds nutrients better than other green teas but it also can have a higher caffeine level compared with other green teas (except matcha which has a high caffeine content since you are actually consuming the powdered leaf). The compact rolled leaves have a much longer shelf live when compared to other teas. Gunpowder tea is often from China but it is a popular tea imported into North Africa where it is used in the preparation of traditional Moroccan (North African) mint tea, by adding mint and sugar while brewing. Green tea is naturally cooling (even served hot!) and the mint enhances the cooling effect on the body.

    Brewing instructions – Add 150mL of 85 – 90 C water to 1-2 tsp green tea and steep for two to three minutes, according to your preference. 
    Jasmine Green Tea – Instead of simply blending jasmine flowers into a tea (jasmine flowers have no distinct taste!), the Chinese green tea is delicately scented multiple times with jasmine flowers by layering them upon each other and letting the flowers bloom onto the tea, infusing their exotic scent onto the leaves directly. This results in a wonderful aroma with each brewed cup that transports you to Asia while you slowly enjoy each sip.

    Brewing instructions – Add 150mL of 80 C water to 1.5 tsp / 3g of green tea and steep two to three minutes. Can be re-infused up to four times.
    Moroccan Mint – This blend takes you to the Moroccan Markets. A delicate blend of high quality Chinese Gunpowder Green Tea (in larger rolls than our previous gunpowder green tea) has been blended with peppermint to give you this delicious brew. We encourage you to try this one with a touch of sugar, sit back and breath in as you sip. Enjoy the taste of Morocco while in the comfort of your own home!

    Brewing instructions – Add one cup of 80 C water to 2 tsp / 3g of green tea and steep for two to three minutes. This tea can be re-infused twice.
