Tea descriptions and brewing instructions

Rooibos Chai – This is not your typical chai! Rooibos comes from a bush in South Africa and is known for warm, earthy flavours as well as a natural sweetness. This combines perfectly with the Indian spices used in chais, making a unique caffeine-free blend for chai. The spices round out the natural flavours of the rooibos and we guarantee that you will find delicious comfort with each sip! Enjoy slowly and let the spices linger.  Can add milk and sweetener of your choice to this tea. 
*note that this infusion contains star anise, licorice root, cinnamon, peppermint, cloves, ginger root and cardamom*
Brew instructions- Add one cup of boiling water (100 C) to 3-5 grams or 1 tsp of loose leaf. Steep 4-6 minutes.
Kandy regional Ceylon tea – Ceylon teas are well-known and well-loved black teas from Sri Lanka. Kandy is a region in Sri Lanka that produces a tea known to be naturally sweet (“like candy”). Kandy tea produces a wonderful orange brew when prepared, and this was perfect for the orange color in our tea rainbow. Medium-bodied with a sweetness that lingers that can be described as notes of honey, mango, cashews, molasses, and hay. This tea is bursting with flavour. 
Try this without sweetener before you add anything to it! Kandy single region Ceylon tea by Hyleys can be purchased here on our website and comes in a gorgeous tin with a resealable bag for maximum freshness.

Brewing instructions- Add one cup of boiling water (100 C) to 1 tsp of loose leaf and steep for 3 minutes. Stir, taste, then steep for another 2 minutes, if desired. 
Pai Mu Tan / White Peony – White Peony contains both young buds and mature leaves that were harvested during the spring harvest. This makes the brew slightly less sweet and gives it a savoury taste. This full bodied delicate tea has floral and fruity notes and a sweetness that are rare in white teas. With only one buds and two leafs per pluck, this makes it a top grade tea. White teas go through very minimal processing. The buds and leaves are plucked very early in the harvesting season and then withered or air dried to remove all the moisture. When brewed, this produces a pale yellow tea that is best enjoyed slowly. Pairs well with a light creamy dessert, fruits, or on its own.

Brewing instructions- Add one cup of 80 C water to 3 g or 1.5 tsp of loose leaf and steep for 2-3 minutes. This tea can be re-infused up to 4 times. 
Genmaicha - genmaicha green tea is a popular everyday tea that combines roasted brown rice with a sencha base.  Genmaicha typically has a toasted, nutty flavour that some describe as "popcorn-y".  This unique take on a typical genmaicha has added black beans and matcha powder for an earthly flavour with the unique properties of a smooth matcha.  
**note that this is a “true tea” from the Camelia sinensis plant and therefore contains caffeine.  It also contains beans and rice added.**
Brewing instructions- Add one cup of 95 C water to 1 tbsp / 2.5 g of tea. Steep for 30 seconds to one minute.
Butterfly pea flower - herbal flower infusion (great with honey)
**Add lime or lemon to your butterfly pea to get violet. Note that this is an herbal infusion and contains no caffeine**
Brewing instructions- Add one cup of 95 C water to 4-6 flower buds. Steep for 3-4 minutes.
Hojicha – this roasted green tea from Japan is gaining in popularity for its smooth, toasty flavour. Unlike traditional Japanese green teas, the leaves are roasted after they are steamed. Roasting decreases the bitterness typically found in green tea and decreases the caffeine content as well as tannins. Hojicha has a naturally sweet and smoky flavour with notes of cocoa.

Brewing instructions- Add one cups of 95 C water to 1 tbsp / 2.5 g of tea. Steep for 30 seconds to one minute.
